These Apricot crumble bars are baked to perfection, though summer isn’t here yet, but the summer fruits are already available. Any form of apricot can be used for this recipe ; fresh Apricot , dried apricot, canned apricot or frozen apricot. This recipe is really simple, it also has a short preparation time. It is important to note that dried apricots were used for this recipe. The best dried apricots, you can get here
Though different people have different names for these: some people call it apricot crumble bars, some call it apricot crumble slice while some people apricot crumble squares. Which ever one you choose to call it, just know that It is really easy and it is perfect for dessert and tea-time.
Ingredients:
1 1/2 cups of Apricots (fresh/ canned/ dried /frozen)
2 sticks Low fat butter
2 cups of Flour
1/4 cup of Honey
1/2 cup of Brown sugar
1/4 teaspoon of Salt
1 table spoon Vanilla extract
1/8 cup of Lemon juice
1/4 cup of Oats

How to:
Preheat oven to 170°
In a food processor bowl,
Combine butter and flour, brown sugar, salt, vanilla
Pulse for a few seconds to minutes. Don’t let the mixture be too smooth, let it have texture, like a crumbly texture
Divide this mixture into two.
Meanwhile, cook apricots in honey and a little water till the apricots become soft and the mixture becomes thick then allow this to cool
In the baking pan, spread one part of the crumble mixture into a flat layer(you may need to press the mixture to even things out a little bit), then add the apricot mixture on this layer then now add the remaining mixture to the top of this. Then add oats, though this is optional. Oats add more crumbs to the dish, it also adds more nutrients.
Bake for 25 minutes
Now allow to cool serve as desired
